Distinct fruity aromas with hint of blackcurrant leaf; a very elegant style with lots of character and length. With a pale golden slightly green colour, this wine reveals fruity aromas on the nose, blackcurrant buds and citrus flavours. In the mouth, this is a blend of mineral flinty scents and a slight acidity without excess.

                    [Notes1] => Having taken over from his father in 1989, Gilles Chollet, along with his son Séverin, today farms 12 ha on the clay/sand/limestone soils of 
Pouilly-sur-Loire. The vineyards face south west, helping to maximize the full ripeness of the Sauvignon Blanc grapes. Vines are planted at a density of 6,600 per hectare and are between 15 to 20 years old. Fermentation is traditional with the wines being produced in stainless steel tanks.

                    [Notes4] => Located 200 kilometres South of Paris and 35 kilometres North of Nevers, the Domaine Gilles Chollet covers 11 hectares of vineyards.

The estate is in the village of Pouilly-sur-Loire.  The vines are planted on clayey, chalky, sandy soils with Southwest exposure.

Gilles Chollet worked in the vineyards for over ten years before taking over the domain from his father to develop it with his wife.

Little by little, Gilles has invested in high-performance equipment that allows him to better control the fermentation and to extract a maximum of aromas.
                    [Notes5] => The vines, are about 15 to 20 years old, are planted at a density of 6 600 vine plants per hectare.  The vines are treated at moderate doses against mildew, oidium (powdery mildew) and Botrytis Cinerea. The grapes are harvested by machine, generally between September the 15th and October the 15th. 

The Domaine Chollet is equipped with modern facilities that make temperature control and aging on the wine`s fine lees possible.

Wines are usually racked in late December then filtered and bottled from late March on.
