[WineMakingNotes] => Ripe grapes are essential to crafting a good Merlot, which is why our winemakers carefully choose the right moment to harvest each particular vineyard. A small part of the crop goes through a hot skin contact maceration providing the fruity aromas of the wine. The rest of the grapes are destemmed and go through a traditional maceration and fermentation for about three weeks. This long process is ideal to extract the varietal’s specific aromatic qualities.
