            [Notes2] => Castello della Sala is located in Umbria, a short distance from the Tuscan border, about 18 kilometers from the historic city of Orvieto. Castello della Sala, a magnificent medieval manor with 500 hectares (1236 acres) of land 170 (420 acres) of which are planted with vineyards, is located halfway between the Paglia river and the summit of Monte Nibbio. The estate’s 170 hectares (420 acres) of vineyards are located at an altitude of 220 - 470 meters above sea level (722-1542 feet) and are planted with traditional varieties such as Procanico and Grechetto but also with Chardonnay, Sauvignon Blanc, Sèmillon, Pinot Blanc, Viognier and a small quantity of Traminer and Riesling. The region is exceptional for producing white varieties with one exception, Pinot Noir, that has found ideal conditions in this terroir to best express its full potential. The vines grow in clay and calcareous based soils, rich in fossil shells, and they are well exposed to the rising of the sun with an excellent difference of temperature between day and night.

            [Notes4] => The 2021 vintage was characterized by a basically cold winter and a generally regular spring. At the beginning of April, when budding had already begun, a sudden drop in temperatures caused an important reduction in production, without affecting in any way the future quality of the grapes, favoring a vegetative delay of about two weeks. A little rainy but at the same time cool May and a summer with sunny days, characterized by a good temperature range between day and night, allowed the vines to recover the accumulated delay and to ensure the correct ripening of the bunches. The good weather starting from August allowed us to carefully select the best grapes, choosing the time of harvest in order to seek the maximum expression of varietal aromas.

The harvest, to be considered of exceptional quality but characterized by a reduced production, began during the third week of August.

            [WineMakingNotes] => Upon arrival at the winery, the bunches were destemmed and softly pressed. The must with its own skins was cooled to 10 ° C for a short maceration of about 2-4 hours so as to extract and enhance the aromatic and gustatory profile of the grapes. Following the clarification, which took place in stainless steel vats, the different batches were transferred partly to wood and partly to steel where alcoholic fermentation took place at a controlled temperature of 16-18 ° C; Only the wooden quota then faced malolactic fermentation. medieval castle. 160 ha of vineyards on particularly complex land at 
altitudes between 164 & 650 ft above sea level – a highly desirable area for the production of great white wines.
                    [Notes2] => The Castello della Sala vineyards were originally planted to a number of traditional grape varieties, principally Procanico and Grechetto, which continue to be cultivated on the estate, giving proper emphasis and attention to these native grapes in their own selected terroir. Procanico is the Trebbiano clone of Umbria and has been cultivated around Orvieto since time immemorial.
 Procanico differs notably from Tuscan Trebbiano in its lesser vigor and yields, its less compact bunches, and a yellow-pink, rather than green, skin. Grechetto is an Umbrian variety with a characteristically thick skin, a deep yellow in color, quite acid in its juice, low-yielding and notably tannic. It produces ample wines which are spicy on the nose, herbaceous with notes of freshly-cut hay, firm in structure, and with a good aging potential and elegance. Non-traditional grape varieties include various clones of Chardonnay – 60 hectares (150 acres) planted between 230 and 340 meters (750 to 1125 feet) above sea level – 20 hectares (50 acres) of Sauvignon Blanc – four hectares (10 acres of Pinot Noir at 340-460 meters -1125 – 1500 feet - above sea level. At the Castello there are also small vineyards parcels planted to Semillon e Gewürztraminer.

Aging takes place in small barrels of French oak in the medieval cellars 30 meters (100 feet) below the castle, cellars which go back to fourteenth century and where time seems to have stood still; in the vineyards, however, experimentation goes constantly forward.

 In 1985 an avant-garde fermenting cellar was created, one where particular attention was given to temperature control in order to maintain the aromatic freshness of the grapes, of fundamental importance for the wines of the castle. Continually searching for margins for improvement, for wines
 of constantly higher quality and greater subtlety, new cellars began to built in 2005, twenty years after the production of the first vintage of Cervaro.

 The study and the planning of the new cellars were all realized in function of the practical needs of the viticulture and oenology of the castle and with the objective of creating innovative architectural and oenological solutions which would serve the production and quality objectives of the estate and its unique territory. To attain this objective, great attention was given to the partly underground structure’s place, its visual role in a context of exceptional beauty of environment and landscape which needed to be maintained.

Castello della Sala, a magnificent medieval manor with 500 hectares (1236 acres) of land 170 (420 acres) of which are planted with vineyards, is located halfway between the Paglia river and the summit of Monte Nibbio. The estate’s 170 hectares (420 acres) of vineyards are located at an altitude of 220 - 470 meters above sea level (722-1542 feet) and are planted with traditional varieties such as Procanico and Grechetto but also with Chardonnay, Sauvignon Blanc, Sèmillon, Pinot Blanc, Viognier and a small quantity of Traminer and Riesling. The region is exceptional for producing white varieties with one exception, Pinot Noir, that has found ideal conditions in this terroir to best express its full potential. The vines grow in clay and calcareous based soils, rich in fossil shells, and they are well exposed to the rising of the sun with an excellent difference of temperature between day and night.

Upon arrival at the winery, the bunches were destemmed and softly pressed. The must with its own skins was cooled to 10 ° C for a short maceration of about 2-4 hours so as to extract and enhance the aromatic and gustatory profile of the grapes. Following the clarification, which took place in stainless steel vats, the different batches were transferred partly to wood and partly to steel where alcoholic fermentation took place at a controlled temperature of 16-18 ° C; Only the wooden quota then faced malolactic fermentation. The wine was then blended and bottled.
