This cuvée is perfect poultry, fine dishes, foie gras, scallops but also with some vegetarians food like red kuri squash veloute with chestnut.			
			

            [WineMakingNotes] => A blending of plots, all from the villages of Solutré & Vergisson, at the foot of the famous rock of Solutré. The grapes are hand-harvested when fully ripe and pressed immediately by pneumatic press.The juice go through static settling. Only the clear juices are matured in old barrels, for alcoholic and malolactic fermentation. The wine is matured on the lees and regulary stirred. It is then fined and filtered before bottling.

As specialists in Pouilly-Fuisse they have a range of different climats, the finest of which is ‘Les Crays’ perfectly situated on the slope beneath the impressive crag of Vergisson. They work the vineyards sustainably and are due for organic certification very shortly. This is an impressive selection that we are delighted to introduce to the portfolio.
