Together these varieties compliment each other, creating an exceptionally
well balanced and expressive wine, with a lifted acidity. The refreshing citrus

            [Notes4] => 85% Sauvignon Blanc, 15% Chenin.  Simple yet elegant green pepper and apple add subtle Sauvignon tones to the more tropical Chenin Blanc.  A refreshing acidic lift on the finish leaves a pleasing citrus taste on the palate.

            [WineMakingNotes] => Harvest started early in February and yielded 8 tons per hectare of hand
picked grapes. The soils from this Mediterranean climate consists of 
decomposed granite and shale lending fresh minirality and structure to 
the wine. The Sauvignon Blanc and Chenin were fermented separately in 
Stainless Steel tanks around 12-15°C. They then spent 3-6 months on the 
lees after which they were blended with care and precision.
