Vintage 2017

Savigny-lès-Beaune 1er Cru ‘Champ Chevrey’ Monopole, Domaine Tollot-Beaut

Domaine Tollot Beaut
Product Code: TL0617RC

Tasting Notes

the red is a deep cherry colour with garnet highlights. It boasts a bouquet of small red and black fruits (blackcurrant, cherry, raspberry) and flowers (violet). The body is ample and discreetly tannic and the fruit remains present. Frequently one will find an elegant hint of Morello cherry. Roundness, volume, power and balance are all here, and in just the right proportions.

            [Notes1] => the red is a deep cherry colour with garnet highlights.
            [Notes2] => The 24 hectare estate is spread across 30 separate parcels. Its base is in Chorey-lès-Beaune but it also has parcels in Aloxe-Corton, Savigny-lès-Beaune and Corton Grand Cru. The domaine adopts a minimal intervention approach to their viticulture with light ploughings used to suppress weeds and no fertilisers are employed. Harvesting is done by hand. The climate is continental with warm summers and cold winters. Champ Chevrey is solely owned by Tollot-Beaut and covers 1.46 hectares of Pinot Noir. It lies just below the Les Lavières vineyards on the northern side of Savigny-lès-Beaune and approaching Pernand-Vergelesses. The plot faces south and the soil is limestone and clay with stony topsoil. Harvesting is done by hand.
            [Notes3] =>
            [Notes4] => Dark crimson colour. Rich and broad this wine is dense. Earthy notes offer a rustic complexity.
            [MediaNotes] =>
            [ServingSuggestion] => its solid, mouth-filling power would be a match for good cuts of beef, or even foie gras poêlé. With a crispy roast fowl, the wine’s fleshiness would compensate for a certain dryness in the fibrous flesh of the bird and it would likewise support in the same way more aromatic poultry dishes (glazed or caramelised). For cheeses, it would do better with sweeter-flavoured types such as Chaource, Brie de Meaux, Tomme, Reblochon, Cantal, Mont d’Or, Époisses.
            [WineMakingNotes] => Between the Hill of Corton and Beaune, the landscape opens up like a map unfolding. The hills of the Côte de Beaune recede a little on either side of the little river Rhoin. These vineyards are of ancient lineage. For much of their history, they belonged to the domaine of the Dukes of Bourgogne, to neighbouring religious houses, or to the Knights of Malta. An imposing 14th century castle testifies to the appellation’s aristocratic qualifications. The
AOC status dates from 1937.

                    [Notes1] => Sitting on 24ha around the north of Beaune, Domaine Tollot-Beaut is run by 5th generation Nathalie Tollot and her extended family. Their focus is very much on the vines, something that is directly translated into the bottle. The clarity of fruit and energy of the wines stands out from other domaines in the area. Despite soaring prices in
Burgundy, Nathalie keeps her prices at a reasonable level. These are proper ‘drinking’ Burgundies, to be enjoyed without guilt or worry! The use of oak is very much in the background, purity and freshness to the fore. Their signature monopole ‘La Pièce du Chapitre’ is defined, crunchy and deliciously unctuous in riper vintages. The Grand Crus offer outstanding value for the purity of fruit and ageing potential.

About this product +

Producer >

Sitting on 24ha around the north of Beaune, Domaine Tollot-Beaut is run by 5th generation Nathalie Tollot and her extended family. Their focus is very much on the vines, something that is directly translated into the bottle. The clarity of fruit and energy of the wines stands out from other domaines in the area. Despite soaring prices in Burgundy, Nathalie keeps her prices at a reasonable level.

Viticulture >

The 24 hectare estate is spread across 30 separate parcels.

Winemaking >

Between the Hill of Corton and Beaune, the landscape opens up like a map unfolding. The AOC status dates from 1937.
