[Notes4] => In the course of the last ten years Prunotto has invested a lot, especially with regards to updating its cellars and the technology of the aging of its wines. Adjacent to the original head offices of the company built in 1970, a new wine cellar, designed by the architect Della Piana, was completed in 1999. This new structure was intended for the vinification and stocking of the wines. Such an investment is fundamental for guaranteeing the expansion and the improvement of the areas designated for processing the grapes. It involves a temperature-controlled facility which allows for maintaining a constant temperature throughout the year in order to optimize the preservation of the wine. Following the introduction of barriques (225 liters), the old large-capacity Slavonian oak barrels (100 hl) were entirely substituted in 2000 with French oak barrels of a smaller dimension (50-75 hl). The latter were better suited for enhancing the potential of the individual wines. Furthermore, over the course of the years, the old cement basins were replaced with stainless steel tanks, which guarantee the best protection of the aromas and other characteristics of the wines. Even the new vertical wine-making tanks are made of steel and have dimensions which are slightly less in height but have a wider diameter, which help maintain the contact and therefore the extraction of the grape skins into the must/wine during fermentation. The production line for bottling was also renovated with the installation of machines with an advanced technology which protects the wine, guarding it from possible oxygenation (which is a negative during this phase); moreover the machinery which inserts the corks into the bottles is much more evolved from a technological point of view, and guarantees maximum dependability in the secure sealing of the bottles.
