A forward thinking family domaine that despite having generations of winemaking experience have a modern and open-minded approach to their production. Jean-Pierre and Michel Auvigue farm their vines organically; the majority in Pouilly-Fuissé and rest in Mâcon-Solutré and Saint-Véran. There is a real focus on single vineyard expression, ‘each parcel is allowed to remain true to itself’. Experimentation with classical music in the barrel room, the judicious use of older oak and a quietly ambitious yet sensitive approach lend weight to the activities of this domaine and the wines they are producing.
Viticulture >
The vines for this cuvée are planted on theheights above the villageof Solutré on former pastures with poor soil. This southerly part of the Maconnais consists of slopes, separated by rocky faults that run north/north east or south/south west and that provide sheltered, well drained land perfect for vine growing. The land consists of sedimentary rocks from the Cretaceous period, a limestone/clay formation with a high concentration of clay. Viticulture is organic.
Winemaking >
Made from the grapes bought from local wine growers, the clusters are pneumatically pressed and the juice statically settled over 12 hours period. The clear juices are then transferred to stainless steel containers for alcoholic and malolatic fermentation under temperature control. After the fermentations, the wine is aged in stainless steel on lees until botttling.
