[WineMakingNotes] => The grapes are harvested at optimal ripeness, destemmed and divided into two sections. Most of them will be traditionally fermented on the skins for about ten days, adding structure to the wine. A small part will go through the thermovinification process and hot skin contact maceration. Next, the juices go through a cool temperature fermentation. This special procedure enables a better extraction of the aromas and enhances the varietal’s aromatic qualities.
