Domaine Jacques Carillon

The Carillon family have been making wines in Puligny-Montrachet since the 16th Century. Jacques and Sylvia set up their own domaine in 2010 following 30 years working on his father’s estate. Domaine Jacques Carillon comprises 5.25ha, all the wines are made from their own grapes grown in a sustainable way using Integrated Pest Management and the avoidance of herbicides. The wines are made to reflect the limestone led terroir with only 15-20% new barrels allowing that sanguine minerality to explode from the glass after some time in bottle.

Vines are both fragile and resistant, the future is to continue building untiringly, vintage after vintage.Here more than anywhere, it’s the terroir that offers the “It”. Unfailingly tied to his village and his vines, Jehan Carillon was already a winemaker in 1520! It’s from this lineage that Jacques Carillon descends. Today Sylvia and Jacques produce from a domain of 5 hectares/12.5 acres, exclusively planted in the best climats of Puligny-Montrachet. All of our wines are from our own vineyards.

Viticulture

Puligny-Montrachet is a historical village and emblematic of Burgundian viticulture. It is part of the exceptional Côte de Beaune, the Chardonnay Heaven. Considered as the prime production area for the greatest white wines in the world of extraordinary complexity, benefiting from the most famous terroirs. Indeed, Puligny-Montrachet includes no less than 17 climats, all classified with UNESCO. Vine cultivation has been present here for over 2000 years!

Winemaking

The vinification and aging is done in oak barrels. A pressing and settling from 12 to 18 hours is done prior to racking the juice to barrel, where the alcoholic and malolactic fermentations occur. Aging is done on the fine lees for one year. The maximum is done to allow for the full expression of the soil, using at the most 20 – 25% new oak, even for the Grands Crus, to be sure to preserve the best expression of their terroir. Minerality, finesse and the terroir expression are what are sought after. Jacques Carillon’s style is very classic in all its nuances, balanced between power, refinement and mineral sophistication, characteristic of our terroirs. “For our wines we think in the long term, in the pure Burgundian tradition.”
