Aubert and Mathieu – The story of two friends who have their credo: Moving the lines.

“It’s the desire to create vintages that look like us: bold, modern, sincere. Wines for those who want to rediscover wine differently, without rigid codes or pompous speech. We believe in innovation, positive impact, and shared pleasure. Each vintage is designed to surprise, respect, make vibrate. Living bottles, for an experience that is just as much.”

The team is passionate, curious and always on the move.  With respect for nature, heart for every project, and a lot of fun in every bottle.

Viticulture

Languedoc-Roussillon as a field of inspiration. They don’t grow the vine, but they grow the good ideas. Anchored in Languedoc-Roussillon, they collaborate with handpicked producers, who share their vision: that of lively, balanced and always a little apart wines. From Minervois to Terrasses du Larzac, via the IGP Pays d’Oc, each grape variety they select tells a story of a place, a climate, an energy. They prepare their vintages hand in hand with them, following precise specifications. Result: fresh, expressive wines, designed for pleasure and always anchored in their time. Freshness, Fruit & Balance. It all starts from the harvest, often at dawn, to preserve the natural freshness of the grapes. They work with trusted partners, native yeasts, spontaneous fermentations, few inputs and a lot of attention. They don’t try to dominate wine, they try to accompany it. To let him express himself. Each grape variety has its personality, each vintage its tempo. This is where magic works: when precision meets letting go, and technique is put at the service of pleasure. No dogma, just a desire to do well. And to do good.

Winemaking

They choose their breeding techniques as they choose a good soundtrack: depending on what the wine has to tell. Barrel, concrete, stainless steel or demi-muids… it all depends on the assembly, the juice, the intention. This tailor-made work allows each vintage to find its balance, to reveal its freshness, its generosity, its true personality. This is how they shape Languedoc-Roussillon wines that mark, without ever being similar. An artisanal and precise approach, between controlled tradition and desire to dare.
