PALATE: Rich, ripe mouth filling cherry, berry and dark chocolate flavours with generous mid palate weight and good length. Fruit and oak tannins are both textural and enhancing."

            [WineMakingNotes] => The 2016 Ottelia Cabernet Sauvignon is
created with fruit from our Coonawarra
property, ‘Ottelia’. Fruit was harvested in
3 batches over a 2 week period to better
capture the distinctive Coonawarra Cabernet
flavour spectrum.
The average vine age in the wine is 23 years,
and moderate cropping saw an average yield
of 7 tonnes per hectare in 2016. The individual
parcels of wine have been vinified separately
and matured in a combination of new, 2 year
old and 5 year old French oak to achieve the
true benefits of oak maturation while avoiding
oak dominance. The wine was blended in
August 2018.
The 2016 growing season was drier than
average, and harvest was around 2 weeks
early. There was a cooler finish to the season
with mild ripening conditions. Typically, 2016
Coonawarra Cabernet Sauvignons have full
palate richness whilst being medium bodied
with fine tannins and excellent colour

Owned by John & Melissa Innes, Ottelia draws on fruit from the Limestone Coast (Coonawarra, Wrattonbully, Padthaway, Robe & Mt Gambier). John and Melissa moved to Coonawarra thirty years ago, they bought a parcel of land ringed by tall Red Gum Eucalypts and natural wetlands dotted with Ottelia Ovalifolia, a native water lily. The first plantings were in 1993, now there are 9ha in total. The wines are deliciously evocative. The lifted aromas and fragile structures are intriguing and we think, will keep you coming back for more.
